Homemade Mayonnaise

With simple ingredients like egg yolk, olive oil, and a hint of mustard, this recipe creates a smooth and delicious mayo that’s far superior to store-bought versions.

Ingredients:
- 1 egg yolk
- 1 teaspoon ground mustard
- 1 teaspoon sugar
- 1/4 teaspoon salt
- A dash of cayenne pepper
- 2 tablespoons lemon juice
- 1 cup olive oil
Instructions:
- In a small mixing bowl, use a blender stick to combine the egg yolk, dry mustard, sugar, salt, cayenne pepper, and 1 tablespoon of the lemon juice. Blend on medium speed until the mixture is well combined.
- Continue blending while slowly adding the olive oil in a thin, steady stream. As the mixture begins to thicken, you can increase the rate to medium.
- Once all the oil has been incorporated and the mayonnaise has reached a creamy consistency, stir in the remaining tablespoon of lemon juice.
- Adjust seasoning to taste if necessary.
