These Morning Glory Muffins are packed with wholesome ingredients like grated carrots, apples, and toasted nuts, making them a delightful and nutritious way to start your day.

Instructions:

  1. Soak the raisins in a glass of hot water and let them stand for 10 minutes to plump up, then drain well.
  2. Preheat your oven to 350°F (175°C).
  3. In a stand mixer, beat together the brown sugar, butter, oil, eggs, and vanilla until well combined.
  4. Add the rest of the ingredients and blend until just combined, being careful not to overmix.
  5. Spoon the batter evenly into 12 muffin baking cups, filling each about 3/4 full. Sprinkle the tops with a little extra rolled oats for texture.
  6. Bake in the preheated oven for 25-30 minutes, or until golden brown. These muffins freeze well, so you can enjoy them later too!
